Red Onion "Rings"

  • Slice 1/2 - 1 whole red onion into rings or half rings into thick slices

  • Add about 1 tbs tamari

  • Add about 1 tbs olive

  • Mix with your hands to coat the onions "rings"

Store in the fridge for the week. Add to salads, use as a beautiful accent or topper for any dish that needs fresh flavor, or as a side on its own. This is inspired by Juliano's Raw Uncook Book.

You can do this with white onions too, but I prefer the milder flavor of the red onion since this is raw. You can also cook these up for roasted onion "rings".

Food Processor Carrots

 

  • Get a bag of organic carrots (red carrots are fun!)

  • Scrub, rinse and drain in a big colander (I don't peel my organic carrots)

  • Process in the food processor

  • Put in a storage container

  • Squeeze 1/2 lemon on top (this helps preserve the fresh carrots)

 

I switch it up every week. One week is shredded carrots, the next is sliced carrots. You will find out quickly which you prefer. These are so versatile. Add to salads, add some raisins for a side dish, use in a raw wrap.

Shredded Cabbage

 

  • Get a full head of cabbage (red makes a nice presentation)

  • Slice thinly with a knife

  • Add a dash of lime to preserve

I don't use the food processor for this because it's so easy to slice cabbage. This goes great with the marinated onion ringlets. Or add more lime and some cumin and fresh cilantro to make a lovely slaw. This is a great side dish for Mexican recipes and goes with any salad.

Zucchini Noodles

 

  • Spriralized zucchini zoodles will last in the fridge for many days

Marinated Mushrooms

 

  • Chopped portabello, or whole small mushrooms, with a splash of tamari and olive oil and lemon juice

Sauces and Dips

 

  • Zucchini hummus

  • Parsnip mayo

  • Kafir ketchup

  • Cashew nacho cheese

  • Starfruit salsa

  • Vegan cheese

  • Pecan cream sauce

  • Pesto

Flavor Bombs

  • Walnut taco meat

  • Chili soaked sunflower seeds

  • Vegan parmesan

  • Vegan cheese

  • Kalamata olives

  • Marinated portabella mushrooms (slice thickly and marinate with tamari and olive oil, server raw or baked)

Shredded Beets 

 

Shred some beets in the food processor, add some lime juice and serve with salads.
