Fiery Mango Salsa 

Chili Pepper Madness

  • 2 small mangos peeled and chopped

  • 2 serrano peppers chopped

  • 1 jalapeno pepper chopped

  • 1 habanero pepper chopped

  • 1 small sweet onion chopped

  • 2 medium red tomatoes chopped

  • 4 cloves garlic chopped

  • ¼ cup chopped cilantro

  • Juice from 1 lime

  • 1/2 cup red wine vinegar or more for a thinner consistency

 

Add all of the ingredients to a food processor. Pulse the mixture several times until you achieve your desired consistency. Pour the fresh salsa into a pan and bring to a quick light boil. Reduce the heat and simmer for 20 minutes. Cool, then store in the refrigerator in airtight containers. The flavors will develop the longer you let it sit.

Mango Chutney 

  • 1 tbs coconut oil

  • 2 sliced sweet mango

  • 1 tbs homemade ginger/turmeric paste

  • 1 broken dry red chili 

  • 2 cloves garlic chopped

  • ¼ teaspoon salt

  • 1 tsp apple cider vinegar 

  • 1 tbs maple syrup

  • 1/2 teaspoon each of cinnamon, cardamom 

 

Heat coconut oil and add garlic and ginger/turmeric paste. Add mango and mash. Add vinegar and spices and cook for a few minutes. Cool and store in mason jar in fridge.

Star Fruit Salsa 

 

  • 1 star fruit (carambola) chopped

  • 1 tomato chopped

  • 1/2 onion diced

  • 1/2 red bell pepper diced

  • 1 big handful cilantro diced

  • 1 large jalapeno diced (if you like hot, use seeds)

  • 1 small cucumber

  • juice of 1/2 lime mixed with a bit of honey

  • 1 kaffir lime leaf chiffonade and a sprinkle of grated zest

  • dash of salt

 

Mix lime juice and honey and salt, then mix everything together.

Papaya Cucumber Salsa 

 

  • 1 semi-ripe (not ripe) papaya

  • 1 cucumber peeled, deseeded, diced

  • 1 big handful cilantro diced

  • 1 large jalapeno chopped (if you like hot, use seeds)

  • juice of 1/2 lime

  • 1/4 red onion chopped

 

Mix and blend half, except the onion for a smoother salsa. Chop the onion fine and add to the blended mix.

Spicy Berry Salsa 

 

  • 1 c blackberries or raspberries

  • 1/2 red onion

  • Handful mint diced

  • 1/2 lemon juice

  • 1 jalapeno pepper diced

 

These are unusual combinations, but they are really good. Use these to substitute for mango salsa. This is great on veggie burgers or veggie tacos.

 

Try blending it to get a ketchup consistency and serve it with sweet potato fries instead of homemade raw ketchup.
